There are two ways to roast coffee. The right way, and the way we will never do it. The right way is a passion. It is half art and half science. It incorporates all five senses and something more. It is a commitment to your product and the environment. It is about people and relationships. Joe Kittay of The Good Coffee Company, one of the first and finest coffee roasters this country has ever known, once said to me, "You have to have a feel for what is going on inside the bean". I never forgot those words and everyday that I roast coffee, I strive to live that credo.We attentively roast our coffee in a vintage cast iron 15 Kilo Probat Roaster. It is heated by gas flames located below the drum. We were schooled in and entrusted with a tradition and roasting method that gave birth to the Specialty Coffee Industry in this country. There are no computers. There is no setting a timer and walking away. We are not some gi-normous carbon spewing factory pumping out hundreds of pounds per batch. Nope. We are all small batch and completely 'a mano'. We are committed to quality, freshness, sustainability, and social well-being. Yup - that's how we roll.
