There are two ways to roast coffee. The right way, and the way we will never do it. The right way is a passion. It is half art and half science. It incorporates all five senses and something more. It is a commitment to your product and the environment. It is about people and relationships. Joe Kittay of The Good Coffee Company, one of the first and finest coffee roasters this country has ever known, once said to me, “You have to have a feel for what is going on inside the bean”. I never forgot those words and everyday that I roast coffee, I strive to live that credo.
